4th of July Vegan Watermelon Pistachio Salad Recipe
Tomorrow is the 4th of July and it is one of my favorite holidays!! I love the patriot songs (I have marching band memories of John Phillip Souza marches), the weather is nice, people have BBQ’s and… fireworks. Is there anything better than that? I love the jovial atmosphere, and it’s the one time of year I can get away with singing Fifty Nifty United States at the top of my lungs without recourse.
But if you are vegan you might have limited options at your friends BBQ which is why today’s recipe is Watermelon Pistachio Salad. I grew up near several pistachio farms in New Mexico and they are one of my favorite nuts.
This recipe is so ridiculously easy, I hope you try it out and enjoy it as much as I do.
Watermelon Pistachio Salad
1 lb of mixed greens
2 cups of cubed watermelon
1 1/2 cups of salted pistachios
oil and vinegar to taste
Mix up the all the ingredients and serve.
I told you this was the easiest recipe ever!! The watermelon is so refreshing in the summer heat and the nuts will give you some protein, so this is great as a side or your main dish.
